The Pheasant Back Mushroom is one of the first edible fungi to appear in the Spring. Harvested when young, they are a very good addition to a meal. In fact, last year a creative chef, known simply as "Chef", lightly sauteed them and then roasted his bounty for a few minutes. They became the croutons for an incredible Spring salad. Well be collecting these along with other wild edibles of mid Spring along the beautiful trails of southwestern Ontario.
